Red Lentil Dhal Recipe

This is my chicken soup when I'm feeling under the weather, my staple when I don't know what else to cook, my cuddle blanket when I'm feeling sorry for myself and my tonic when I've indulged a little too much the night before. It's a poor man's main dish and a king's side dish - it's the simple humble masoor di dhal.
It forms a huge part of so many Indian peoples diets because it's cheap and is a great source of protein for the vast number of vegetarians. As children, we didn't know the names of all the different lentils so we would call this yellow dhal (even though it's made with red lentils) and that's what my children call it too.
Cooked with whole cumin seeds in a tomato based masala finished with crispy onions and fresh coriander.
200g red lentils, washed
900ml water (approx.)
1 tsp of salt
1 tbsp ghee or vegetable oil
1 tsp of cumin seeds
1 bay leaf
1 small onion, chopped
1 garlic clove, chopped
2 tomatoes, finely chopped
1 tsp ginger, grated
1 tsp turmeric
1 chilli, finely chopped
1 tsp fenugreek leaves
1 tsp of garam masala
1 or 2 whole chillies
Handful of coriander, chopped
Place lentils in a pan with the salt, cover with the water and bring to the boil.
Remove the froth, reduce the heat and put the lid on the pan - leave to simmer for 10 minutes. Check the lentils are cooked by squeezing them between your fingers. Once soft remove from the heat.
In a frying pan heat the oil or butter. Using a fork pierce the whole chillies and add to the pan with a bay leaf and the cumin seeds.
When the seeds sizzle, remove the chilli and set to one side for your garnish.
Add the onion and garlic and fry until lightly browned. Reduce the heat and add the tomatoes, ginger, turmeric, fenugreek and the chopped chilli. Gently let the ingredients cook down for about 10 minutes to make a thick masala paste.
Add a ladle full of the lentils (dhal) to the masala paste in the frying pan and stir together, then empty all the contents back into the pan with the lentils and stir. It should have the consistency of a thick soup but if it's too thick just add a little boiling water and remove from the heat. If you prefer it thicker just leave it on the heat to reduce until you get the consistency you want.
Check the seasoning and add a little salt if required. Stir in the garam masala, coriander and top with the whole chillies to serve.

  • This was a very taste dal dish, Hari. I truly enjoyed it. Wow! I used grapeseed oil instead of ghee since I was not able to get it here in Jamaica without driving quite far. I also used dried cilantro instead of fresh. I'm sure fresh was better but overall the flavor was great and I thoroughly enjoyed this recipe.   • Hi Hari, I am an American who has become absolutely enthralled with Indian cooking and culture and I love your videos so much. In my Indian cooking journey - I noticed with many dhal recipes - garlic and ginger is chopped and added when making the masala portion - whereas in a lot of other dishes ginger garlic paste is used instead. Is it possible you can help me understand the different applications as to why they should be added as chopped and not in a paste?

    • Hi That is great to know - so pleased that you are enjoying the videos. The difference is really personal preference. I prefer not to buy garlic, ginger pastes because I prefer to use fresh so I use what I have in my fridge and its quicker to chop or grate rather then get a blender out. I also like the texture of garlic slices in my dhal. If I wanted to cook something with a silky smooth sauce I may then blitz the ginger and garlic to a paste and use that. I also sometimes blitz to make a homemade paste of ginger and garlic if I have a lot of it that needs using up. I will cover with oil and and keeps for a few months in the fridge.   • Don't mind me, but I just want to say that your Masoor dal curry look a little bit grainy or clumpy, it maybe the quality of the dal, and also maybe that you don't used kadhai and maybe its not cooked long enough.. For me I like my dal to be a little bit on the runny side.. But maybe its just me

  • Do the tomatoes mean this is a Goan dish? Or did tomatoes make their way throughout the country after colonization? How do red lentils differ from others? The lentils we are used to in the u.s. are green or tan and theres something i dont like about them. Im pretty sure theyre the same that go into muligatawny....but i want to like them. I think people just dont know how to use them here.

I cooked this for lunch with a few adaptations due to lack of ingredients: Some Tabasco instead of chilli Fresh rosemary instead of fenugreek Tomato paste in a tube instead of fresh Fresh parsley instead of fresh coriander A really delicious, simple and quick meal, I had mine with boiled rice and I made a chappatti to go with it.   • Made it last week was beautiful 👌🌶️🌶️ I had a lot left over so i actually used it as a sandwich filling; toasted some bread spread a bit on there, added a slice of (vegan) cheese - microwave for 30s, it was absolutely sublime.. Vegans it's a great recipe!
