Neapolitan pizza dough is the most recognized in the world, but many get it wrong, so I’ve enlisted world champion pizza maker, Johnny Di Francesco to teach us his secrets to how to make neapolitan pizza dough. True to Italian tradition, Neapolitan pizza dough is made up of very few ingredients, water, salt, yeast and all-important flour. The taste and crunch make all the difference, so watch as we pair it back and respect the simplicity of this fine dough.

600ml water (room temperature)
1kg 5 Stagioni Napoletana Pizza Flour, Tipo 00 (RED)
30g salt
1-2g fresh yeast (or half teaspoon of dry yeast)

  • I actually didn't understand one thing. Do I let the dough balls to rise double in size then fridge them over night to let 'em mature, or freshly made balls straight into the fridge? I cannot go 18 or under Celsius atm.

It is so easy.Thanks to this video I suceeded making my real Italian Neapolitan pizza after having tried many other instructions. I baked the dough in a mini oven ( precooked the dough and tomato ). Even though the pizza turned out to be really authentic and amazing like at the Italian restaurant.Thanks.

I had no such a big bubble in the dough as in your video but I think it’s because of using wooden oven.   • Great Instruction! One question, what temperature of water did you start with? I could get to the temp required pretty quickly without kneading if I started with warm water assuming I didn't use spring back test.

  • Cries in Celiac. I think the thing I miss the most is real pizza. Even the best Gluten Free pizza is, at best, just okay, nothing compares to the real thing.
