I love your recipe! I don't always have all the ingredients and I make substitutions for leeks and chili peppers. My chicken does not come out as well if I double fry it so I skip that step. For me it tastes the best when I use all of your ingredients but when I want something quick and don't have all the ingredients, this is my go to dish. Thank you!

I made this today out of sheer desperation. Ever since I saw this video 2 weeks ago I've been craving it. I'm sure it didn't turn out as good as yours but I must say the 40 minutes it took for me to cook this was worth the wait. The leeks really make a difference. I was so hungry I skipped the onions and chilis part, and for some reason I missed the ginger while I was jotting down the recipe. But it came out delicious anyway. Instead of Korean rice syrup (I couldn't find at the Korean grocer), I used mainly mirin then added just a bit of honey. Where I live we have really hot chili peppers that look like guajillos but I'm not sure what they are. So I used them instead of pepper flakes. My dish came out quite spicy hot, as you would find in Szechuan cooking. I cut the chicken into bite size pieces....they fried quicker that way and they were so moist in my mouth. I did have to struggle to break up the chicken pieces as they did stick together while frying....and also to the wok! But in the end all was well. Thanks for this delicious recipe.
